This version of porridge is so luxurious because forbidden rice is packed with antioxidants. It’s the superfood version of white or brown rice, and with a flavor much more fun on the palate. It’s a gluten-free grain and this kind of carbohydrate will not cause insulin spikes with its dense fiber content.
There is something special about combining this rice with a coconut-y flavor, like from coconut milk. This can also be a nice “leftover” meal – if you’ve made this rice for other meals, and have some left, using it in this recipe converts it into a yummy breakfast.
INGREDIENTS
- 1 cup forbidden black rice
- 2 cups filtered water
METHOD
- Soak rice in filtered water overnight.
- Drain and rinse well.
- Cook with the 2 cups of water in Instant Pot (porridge setting) or on the stovetop (1 hour).
- Store in glass container in the fridge to last one week.
- Reheat with some nut/oat or coconut milk.
- Top with one cut fruit.
- Sweeten with 1 tbsp maple syrup or raw honey.
