Black Rice Porridge

This version of porridge is so luxurious because forbidden rice is packed with antioxidants.  It’s the superfood version of white or brown rice, and with a flavor much more fun on the palate.  It’s a gluten-free grain and this kind of carbohydrate will not cause insulin spikes with its dense fiber content.

There is something special about combining this rice with a coconut-y flavor, like from coconut milk.  This can also be a nice “leftover” meal – if you’ve made this rice for other meals, and have some left, using it in this recipe converts it into a yummy breakfast.

INGREDIENTS

  • 1 cup forbidden black rice
  • 2 cups filtered water

METHOD

  1. Soak rice in filtered water overnight.
  2. Drain and rinse well.
  3. Cook with the 2 cups of water in Instant Pot (porridge setting) or on the stovetop (1 hour).
  4. Store in glass container in the fridge to last one week.
  5. Reheat with some nut/oat or coconut milk.
  6. Top with one cut fruit.
  7. Sweeten with 1 tbsp maple syrup or raw honey.
