This gluten-free version of pancakes is so easy and yummy. I keep oat or almond flour in glass jars in the freezer so it lasts longer and let’s me whip up something like this when friends or family come over. I love to top pancakes with fresh fruits or a warmed up “compote” from frozen berries.
INGREDIENTS
- 1 cup oat or almond flour
- 2 tsp baking powder
- 1 tsp vanilla extract
- ¾ cup almond milk
- ¼ tsp salt
- 1 egg
METHOD
- Mix the dry ingredients well in a big bowl.
- Softly mix in the wet ingredients.
- Heat skillet with butter or ghee.
- Make pancakes!
